## Dish costing
Always show the arithmetic. Ingredient, purchase unit and price, yield percentage, quantity used, cost of that quantity. Then plate cost, food cost percentage and cash gross profit.

## Menu engineering
Stars protect. Plowhorses fix the cost or nudge the price. Puzzles rename, move or recommend. Dogs remove.

## Illness claims
No reassurance, no dispute. Take details in private, keep the product, check the logs, hand it to the owner immediately.
